Jeff Katz’s World Famous Turkey Brine Recipe

For everyone who has asked, here's my turkey brine recipe:

Every year, you ask for it, so here it is! The recipe for Jeff Katz's world famous turkey brine thatis sure to make your bird taste even better this Thanksgiving!

  • 2 cups of Kosher salt

  • 2 cups of dark brown sugar

  • 2 cups of apple cider

  • 2 cups of orange juice

  • 2 gallons of cold water

  • 6 cloves of garlic (minced)

  • Rind of two oranges

  • Two oranges chunked

  • 6 whole bay leaves

  • 2 tablespoons of rosemary

  • 2 tablespoons of peppercorns (ideally black, white and red)

  • 2 tablespoons of whole cloves

Combine all of the ingredients in a large stock pot, boil until sugar and salt dissolve completely.

Turn on the heat and let cool.

Pour the entire mixture over your turkey. Make sure that the turkey is breast down. After the bird has been in the brine breast side down for 18 hours, turn the the turkey over (breast side-up). I always place the turkey in a large heavy duty trash bag and then in to a cooler or something similar in the fridge.

Once the turkey has been brined for 24 hours, remove from the brine, discard all of the liquid, wash the turkey thoroughly (inside and out), dry thoroughly and bake/roast according to your favorite method.
